Groundhog Day

My friend and old roommate, Jessie does so many creative things for holidays. One of her specialties is "Groundhog Meatloaf." This year I decided to give it a try. We'll have to see how it tastes, you must serve it with mashed potatoes and gravy (dirt mounds for the groundhog). Whether or not the critter saw his shadow is really irrelevant once he's hit the dinner table. This is also my first time every making meatloaf...just never thought I should use that much ground beef for one meal.
